No Peanut Vegan Pad Thai

1 head broccolini
1 large carrot
1 large daikon radish
1 head red cabbage
1 pack water chestnuts
1 package rice noodles
Cilantro and lime slice to garnish
2Tbsp evoo

Rice Noodles - cook as directed, separately.

Chop veggies and saute lightly in evoo. Mix in the noodles and No-Peanut Sauce.

No-Peanut Sauce
1/2c unsweetened coconut milk
1/2tsp salt
2tsp teaspoons live apple cider vinegar
1tsp lemon juice
1.5tsp coconut nectar
1tsp hing/asaforetida
1/4c each smooth, roasted unsweetened almond butter & cashew butter
2tsp toasted sesame oil
2tsp coconut aminos
2 pinches each of turmeric, cumin, cardamom, and ginger

Blend all together and adjust portions to taste.

Toss all together and enjoy! Optionally add crumbled tempeh or 3 tbsp hemp seeds for added texture / protein. If you're not vegan, saute an egg and add in :-)
